I found some threads on education in other categories, like ECONOMICS and POLITICS, but am of the mindset that education should be its own category. While it can be economic or political in scope, it can be so much more as well and deserves its own category.
I also think you really should have a JOBS or EMPLOYMENT category as well.

I'm worried about creating too many categories though. I'd create education if I could get rid of another category, but they are all active.

You've only used up half of the space for categories. You could, quite easily, add a few more categories without it appearing cluttered and without having to get rid of anything already there. Trust me.

We've got an education section, it's called politics.

Actually, I have. I've accessed it a few times on my BlackBerry Curve and it appears on a smartphone similar to that of Craigslist. Unfortunately, that doesn't have anything to do with the site categories. It's the format of the site. It just doesn't translate very well to cell phones.

When I suggested an education category, I was suggesting a category in which we could discuss the institution of education and the latest decisions made by those within the field and how they'll impact education overall.

What do you want to know? I actually wrote software for an institution that was the first to comply with the Rubric assessment requirements for Program course outcome effectiveness.
"how they'll impact education overall."
With more ineffective convolution.
