Quite interestingly, it is well-known that nitrites in processed meat cause stomach cancer. I wonder if all sausages in CA are labeled as "cancer-causing", as in that case it actually is demonstrably true.

The real question should be the overall impact on life expectancy.

Coffee may well have a net positive effect on life expectancy, not to mention life enjoyment!

Alcohol is also known to cause esophageal cancer, yet in relatively small doses has an overall positive impact on life expectancy because it reduces the rates of other cancers and of heart disease.

Acrylamide is part of almost any cooking/baking/brewing process. Net net coffee prevents diseases vs causing them.

I saw a good statistic once that showed that merely not smoking gives a life expectance boost greater than everything else one can voluntarily change in one's life, put together.

So by just not smoking, you've already done more than half of everything you can do.
