Rin is going to have Prime Rib for Thanksgiving, not Turkey

First of all ... turkey sucks! It puts you to sleep and it's really only good for the first one or two helpings.

Instead, I'm having a Prime Rib Thanksgiving, with a few Cornish hens on the side, to mimic the Turkey effect for those who're traditionalists.

As a result of forking out the cash for the Prime Rib ... ppl will attend my T' Day over the lameass ones in their own families, where being cheap with BJ/Costcos' bulk turkey delivery, forms the majority of their protein meal.

+1 for prime rib. Smoked turkey is solid though with a good and fresh bird. Although smoke prime rib probably wins the day above all.

In addition, I'll be boiling a few Lobsters, de-frost some Alaskan Crab legs (since they always come frozen from the Great White North), and the booze will be following all night long! I've gotten a huge stash of Patron Silver for Margaritas, Tanqueray, Grey Goose, so that anyone can make a Cranberry cocktail of one's own desire.

The Oysters are from Wells Fleet MA.

In 97 I was roommates with a chef from a high end restaurant frequented by Oracle execs. Him and two other guys. He invited family to our house in Redwood City and cooked up a feast for us at Thanksgiving. Started drinking at sun up and served us at sun down. Then he went to his room and passed out face down while we all ate.

Here's what's missing ... since we're in Massachusetts and not the Quebec province in Canada, we can't have hoes at this gathering. In other words, everyone can't bang away in private, only those who bring a partner along. Sorry, I can't change the laws in Yankeetown.

The Prime Rib & Hasty/Cornmeal "Indian" pudding, yes, the other stuff, however, I'd ordered in advance for delivery Thurs morning.

But the Lobsters will be boiled, real-time.

There's one fun thing about a 18-pound turkey, though: The expression of my Chinese girlfriend when she saw the bird for the first time... "that's the biggest chicken I've ever seen!"

@ Rin, I have a Tequila suggestion over Patron.

Check out Hornitos Black Barrel. Also see if you can find some Don Julio not too expensive (maybe NH liquor stores have it)

I'm not a big drinker, but I lived in Mexico and Patron is not the best of the tequilas available in my opinion.

1800 is pretty good and was often a real bargain down there.

Anything you get make sure it says "100% agave" . "Reposado"=aged which also helps smooth it out.

I make the perfect pink Prime Rib. First unwrap the roast and let it sit in the fridge overnight uncovered.
Then before you cook it, take it out of the fridge and let it come up to room temp.

I cook it by first putting it in a 500 oven, I think the rule is 5 minutes a pound, if the roast was chined from the bone and tied back to the rib rack with butcher string.
If the rib bones were not cut away and the roast still has the bones, bump it up to 6 minutes a pound.

For instance, if you have a four-pound roast, 4 × 5 = 20 minutes. An eight-pound roast? 8 × 5 = 40 minutes.
After 40 minutes of baking time(if you have an 8lb roast). Turn off the oven and let it sit in the oven for about 2 hours. Do not open the door for any reason.

It should come out lustrous pink and not a bit of pooling blood or juices(Which I like btw, but it puts other diners off)

Tip for the pan you bake the roast in.
Put a bunch of vegetable scraps on the bottom of the pan. All of your Celery butt ends, the Carrot tops, the Onion peels and root ends, all of the vegetable scraps you would normally throw out or put on the compost pile. Take them and line the bottom of the pan real good. Then add a little water just so the bottom of the pan is wet but, the water does not go over and cover the vegetable scraps. This will prevent the drippings from burning up in the pan, and when you're done, your Ajus will be 90% made for you just by draining the juice from the pan. If you like a Frenchie Ajus mix half water and half red wine for the liquid on the vegetable scraps.

An Old Navy Cook taught me this method. It was how he made huge standing rib roasts for the high end Catering company he worked for.

Debone the little suckers, by cutting the backbone with scissors, pull out the breast bone and keeping going. Cut away the thighbone and leave the drumstick and the wing then stuff them with your favorite stuffing, and sew them back up. When you sew the back up, then flip it back over. The breast side up, it should look like a stuffed bird with the bones still in it. Because the bones are gone, you can stuff more meat in them than otherwise.

Yes, 1800 is also the best deal in town around here. It's pretty much the value added superstar in the 100% agave dept as it's only a fraction of the cost more expensive than the crappy sugar/agave blends out there like Sauza (pure chalk-- disgusting) or Jose Cuervo (sewage-- even worse). I just picked up a few supersized bottles from the liquor store.

Prime rib is a great choice. We're doing a couple racks of lamb chops with Yorkshire pudding and veggies. My wife is keto so more Yorkshire pudding for me lol.
