i'm not a fan of cooked seafood in Sushi it defeats the purpose. But this was amazing.

That looks pretty good.

I had lobster sushi in Japan once; it was a live lobster which had the tail diced up so you could eat the tail meat with chopsticks.

It was creepy to see the antennae moving while I tried to eat uncooked lobster tail meat.

Some things taste better cooked than they do raw; eggs, lobster, squid and other things.

I've watched this guy make things before and I usually love it. I modeled my whole Japanese Nacho dish out of something that he made. That being said, a 10 lb lobster is too big to cook properly by steaming. I once cooked a 7 pounder and it was awful. The outside ends up overcooked and the inside undercooked. Generally, you aren't going to beat the 1.5 lb new shell lobsters out of Maine, and they are so good, you just stick them on a shitty piece of buttered bread and it would still taste better than what he made.
