Seriously, I've never had to order Dim Sum to go in my life before.
The whole idea of Dim Sum was for friends to go to a Chinese restaurant during brunch time, and order from trays of dumplings and/or Chinese 'tapas', as they were cooked and sent out into the crowd, in rolling carts, prior to the dinner crowd. Normally, this was a a weekend outing though some Dim Sum places have a weekday breakfast option.
There was no concept of them being packaged and sent out, like some Gyros-to-go or Chicken Cacciatore in a box.

Well now, it's the case 100% of the time.
