Can you share please how you did that? The steps is what I can never get right on Rame. I tried making it before myself, but I just ended up buying the concentrate off amazon to make broth.

So I started with this:

Modifications:

1. I over roasted the chicken bones so wound up using only pork neck, shank and hocks for the broth.
2. Boiled the bones for a full 24hrs
3. Fried up the chicken skins and used that fat for the infusion oil instead of the roast drippings (too burnt) and used the chicken skins as a topping.
4. Fried up the leftover pork bits from the bones and mixed that with the infusion oil for topping.

The rest was the same. Tonight I'm going to make some more but lighten up on the Tare a bit and add a bit more water to the bone broth. Also add 60-90 seconds time to the half boiled eggs. Mine were cold and his were room temp I think to start.

I hate this time of year. Fuck these "traditions" that are foisted upon us. 90% of people that celebrate xmas don't even go to church outside of Easter and xmas time likely.

Thanksgiving is a waste. If you like cooking you're neutered by family about how you can make a turkey or they get pissed. "That's not how my mom made it..." yeah not fucking dry and tasting like shit, but what do I know? I'll do the regular turkey, but I always do a side breast made my way and if someone isn't a massive pussy they eat it and love it.

If I didn't have kids I'd be in St. John, USVI from about now till the end of Feb. If you want to see me come visit. Do a big morning hike every day. Eat breakfast. Pack a cooler. Lay on the beach from 10-4. Weekends maybe jump down to the lesser Antilles islands and get to know them.

Even though we're going to be spending this Thanksgiving with my brother and his in-laws (who are libtards), I'm OK because:

1) Trump won
2) People are becoming aware of the vax deaths the ridiculous and arbitrary rules during the scamdemic.

I don't have to say shit or argue - reality will sort them out over time. I'll just enjoy the food.

I have this weird hang up, I will only order Asian food from a legit Asian establishment that specializes in the dish I'm ordering.
No Fusion food places with cute corporate names for me.
But if you were serving that at a greasy spoon Dinner Lunch Counter, and that was the soup of the day. I would be slamming that every time I saw it.
