Isn't that stat true for pretty much all startup businesses?
I think you start restaurants to keep cash under the IRS radar, sell drugs, or keep a numbers or gambling table in the back.
For years, I'd pass a great ice cream shop and if I had cash, it was a good day since I could stop and buy a soft serve ice cream cone.

The point was about 1. I don't think restaurants rely on cash anywhere near what they used to and 2. it's interesting that most ice cream shops I go to only accept cash.
