I would not take armchair-commando special force internet warriors too seriously. If shit will hit the fan, cities will be ruled by gangs of one or another type, not middle class used to comfortable life and never having had to defend themselves (unless defending themselves is understood as running to police and crying). With respect to ethnicities that will have the best chance for survival - ones with strong family ties and nowadays-outdated-family-structures will win (Asians, Hispanics).

Don't know about maternal grandparents because Dolores Hudson wasn't famous, but the maiden name speaks for itself.

That sounds pretty mixed WASP/Scandinavian to me, given his parent's hometown and last names of his ancestors. Gundersen is obvious and Paddock is an ancient English name with plenty of Frontiersmen, Anglican/Episcopalian Bishops, etc. in the 19th Century with that surname.
