You seem to imply that emergency prepardness makes one a "wacko". What, are you a liberal? Haven't you ever heard of earthquake prepardness? Don't people make emergency prepartions for hurricanes, tornado's, floods and other types of natural disasters? Bears, squrirrels and other animals prepare for winter.

The Mormon church urges its members to have a 2-year food supply. Costco has a built in customer base with these people.

Are you implying that you're normal, abeabe? or simply that everyone who holds a different view than yours is a liberal? You're wrong on both counts.
If anything bad enough ever happened to call for a one-year supply of food, you'd still be screwed.
After a month or two, all of the people who didn't save food will come looking for yours.
A much better use of $3500 would be a few good weapons and a big ammo supply.
Preparing for a major disaster (earthquake, fire, flood, etc.) is certainly a good idea, but that calls for a month's supply of food or so at most. In most cases, you're probably going to be able to leave the area fairly soon after the initial event anyway.
That said, human beings are horrible at planning for disasters. We've seen time and time again that everyone pretty much winds up in the same position after a major event. There is a scene in "The Road" where the family comes across an old bomb shelter that is full of food. The owners of the bomb shelter had died in the disaster.
The problem with food storage is that if it isn't rotated, it's no good after awhile. But it's good to have a supply to fall back on. Not sure that a year's worth is worth the $.
I had friend (& family!) in the 80's who were "survivalists". All of their stockpiled food never got eaten, and was a complete waste. Same goes for most of their other supplies too. I can totally see stockpiling staple items when it's cheap, as long as you rotate. However people that buy the emergency package, will never eat anything in that box.
On the other hand, buyers would probably spend that money on lottery tickets anyhow, so it hardly matters.
