Probably parked in hangars and gassed, the so-called phone calls from passengers contained no airplane noise, and it was demonstrated that cell phone calls to ground were not possible at the time anyway due to technology limitations. I've seen a lot of videos like this. They simply dub over someone else's voice with words that would have a similar lip movement. Pretty funny results sometimes.
